Are your fruits and vegetables ripening or spoiling too quickly? The issue may lie in how you store them. In this episode of Science and Cooking, chef Heinz Wuth explains ethylene, a natural gas released by certain foods like bananas and avocados that accelerates ripening in other produce.

Some vegetables, such as cucumbers and leafy greens, are particularly sensitive to ethylene. To keep your produce fresh longer and reduce food waste, store certain items separately, refrigerate them, and manage moisture levels. On World Food Day 2026, the FAO encourages us to innovate in food preservation by understanding our food better.
